a word from the wise

"It isn't as bad as you sometimes think it is.  It all works out. Don't worry. I say that to myself every morning.  It all works out in the end.  Put your trust in God, and move forward with faith and confidence in the future.  The Lord will not forsake us.  He will not forsake us.  If we will put our trust in Him, if we will pray to Him, if we will live worth of His blessings, He will hear our prayers."

Sour Cream Chocolate Bundt Cake

Who doesn't love a yummy chocolate bundt cake? They just make this world a little better.

Jake requested this particular cake for his birthday and it was a hit! I got the recipe from my family cookbook. Here's how to make it:

Cake

3/4 cup water
1 box chocolate cake mix
4 eggs (or 3 XL eggs)
3/4 cup oil
2 tsp. almond flavoring (optional)
1 (3 oz.) pkg. butterscotch instant pudding
1 (8 oz.) sour cream
mini semi-sweet chocolate chips (save 1/4 of bag to sprinkle on cake after frosted)

Beat all ingredients 3-4 minutes. Sprinkle cinnamon and sugar in the bottom of a Pam or buttered bundt pan. Bake 325 degrees for 50-55 minutes. Cool at least 10 minutes before you take out of the pan. (I cooled a lot longer than that just to be safe.)

Frosting

You can use any chocolate frosting but this is what I did (a little trick I learned from my grandma):

1 tub of Betty Crocker Fluffy White
1 tub of Creamy Fudge Frosting (Pillsbury)

Mix together well and frost cake after it is cooled. Use the saved chocolate chips to sprinkle on top. And you're done!

(You can substitute the cake mix and pudding for different flavors like lemon or spice cake!)

Enjoy :)
